One of the first things my husband got excited about, as we moved closer and closer to our new home in Colorado, was fresh sweet corn. We both lived in Nebraska for a time and the summer sweet corn was one of the highlights of knowing a lot of farmers. My husband even swears that no other corn is as good as Nebraska sweet corn!
We were lucky enough to snag a bunch from my sister-in-law (she comes from a farming family). I don't mind basic corn on the cob, but eventually, I'm going to need something new and exciting to make it through all this corn! So I decided to round-up some delicious corn recipes from around the web.
I love Corn Chowder! I'm looking forward to making this recipe as the weather cools down.
This salad is served cold and would be a great side dish at a barbecue!
This recipe takes a little longer to make, but is well worth it!
Creamy Confetti Corn with Bacon by Cooking Classy
Yum! Who doesn't like bacon sprinkled on top of your side dish?! This corn is served warm and can be whipped up quickly on a weeknight.
I have already made this recipe a million times because it's delicious and cheesy and sweet! Substitute the canned corn for fresh corn.
I spent a good deal of time preparing the corn for the freezer so we can enjoy over the next few months! I'm excited to put all five of these receipes in rotation.
Do you plan to make any of these recipes? Let me know in the comments below!
